- lemon cake mix
- 1/3 c oil
- 1 egg
- 1 T water

Cake Mix cookies
This recipe is for Lemon Iced cookies, but you could use many of your other mixes for lots of variety!
ie. chocolate cake mix with peanut butter morsels or chocolate cake mix with peppermint extract and crushed up candy cane bits...
Mix all ingredients together. Form into small balls, press to "flatten" (like a peanut butter cookie), bake at 350 degrees for approx 10 minutes. When cooled drizzle with lemon glaze...pwd sugar and lemon juice (I found this on the side of the lemon cake mix..I think it was 1 c pwd sugar and 2 or 3 T of lemon juice. I put the glaze in a plastic bag and put a hole in one end to drizzle it on each cookie
These cookies turn out very moist and they freeze well.

I have been making these lemon cookies for years! They are the best and soooo moist. I made them one summer for my nieces when they had a lemonade stand and they sold FAST! Plus, they are very easy to make.

You can use any kind of cake mix with this! They are so good and so easy!!

Yum. I make these with yellow cake mix and put a little vanilla frosting on top with colored sprinkles. Everyone always raves about how moist they are!

My elderly friend has been making this for years! She calls them "trash cookies" Because she uses up all the little leftover nuts,coconut,baking chips,etc. that are left after making other recipes in them. She makes them up for her grandkids. She always has them on hand. They are great and easy! Thanks for reminding me about them!
