Spinach Lasagna - Easy & Healthy

Filling

20 oz low fat cottage cheese
10oz frozen chopped spinach – cooked and well drained
2 cups mozzarella cheese – shredded
1/4 cup grated Parmesan cheese
2 eggs beaten
1 cup of finely grated carrots (I used a food processor)
1 ½ tsp Italian seasonings

Combine the above ingredients for filling

9 cooked lasagna noodles
26 oz spaghetti sauce

Layer in a 9x13 pan
1 cup spaghetti sauce, three noodles, half the filling, repeat. Top with three noodles and remaining sauce.

Topping

1 cup mozzarella cheese
¼ cup Parmesan cheese

Add cheese on top.

Preheat oven to 350F. Bake 45 minutes; let rest 10 minutes before serving.
