- 9 oz. packaged refridgerated cheese-filled tortellini (like Buitoni)
- 16 oz. package of frozen asian stir fry veggies
- Bottle of peanut stir-fry sauce

Tortellini Stir Fry
Cook tortellini according to directions.
In a large pan or wok, add 1 tbsp. oil and cook frozen veggies (about 6-7 minutes). When the veggies are done, add the cooked tortellini and 3/4 cup of peanut sauce. Cook for two minutes or until hot. Serve immediately.
This is a quick and easy dish that I just found and my family really likes. The best part about it to me is that the tortellini has a shelf-life of a few weeks before cooking, so it's something I always have in my fridge and can cook whenever it seems like there is nothing to eat for dinner. Plus, it tastes great as a leftover for lunch the next day. You can experiment with different veggies or sauces, too.
