Shopping List
  • onion, chopped
  • red pepper, chopped (about 8 pieces)
  • red pepper flakes, 1/2 tsp
  • 6 egg whites
  • 2 whole eggs
  • salt
  • pepper
  • artichokes in water, drained 6 oz
  • 2 tsp of olive oil, (or your favorite HEALTHY cooking oil, and just enough of it to coat your skillet. I use at least 2 tsp cause that's how much you're supposed to have in a day, and that gets my servings of it in )
  • low fat shredded cheddar cheese, 1/4 cup
Thumbs up Red Pepper and Artichoke Frittata

Heat your oil coated skillet.
Add your chopped onion and saute it,
Add your chopped red pepper, saute it
Add your artichoke, saute it (now they're all sauteing together)
After it's all been sauteing (excuse my spelling) for about 2 minutes,
Mix red pepper flakes, salt, pepper, eggs, and egg whites together. Pour that into the skillet over top of your saute. Cook until the eggs begin to set up. I usually lift up around the edges and let the runny parts run underneath. Sometmes I carefully flip it over, and make sure the eggs all the way done
When the eggs are cooked all the way, sprinkle it with your cheese and place skillet and all under your broiler til your cheese melts. I've learned it's safe to do this with my skillets for no longer than it takes to do this and as long as I watch it. Of course make sure your handles don't start to melt, and whatever you do, don't forget you've put it in there!!
When you're cheese has melted cut into four slices and enjoy. If you're following WW points system, each slice is 3 points.
