Recipes for leftover ham?

I don't have any leftover ham yet but after tomorrow I will.
I'm curious if anyone has any favorite recipes for using up this yummy stuff after you are sick of sandwiches. Any freezer friendly casseroles? TIA!

Ham & Potato Casserole

6-8 medium potatoes, cubed
8 oz. sour cream
1 can cream of mushroom soup
cubed ham
1 c. shredded Cheddar cheese

Cook potatoes until they are almost done. Mix all ingredients into a crock pot and cook on low until potatoes are done.

Pretty simple. I add garlic and a can of mushrooms usually. You can also add broccoli or some other veggies, just make sure they cook down.

Marcy's Special
1 pkg potatoes O'Brien
cubed ham
4 eggs
6 slices american cheese

In a non stick skilet brown potatoes and ham. Once they are cooked, make a hole in the center and scramble eggs. Mix together. Cover with cheese. Cover until cheese melts. Good for ANY meal of the day.

here is soup recipe

Basic Ham and Bean Soup - All Recipes
ISO deli meat,any smoked sausage or keilbasa,ragu sauce,chex snack mix, cheerio snack mix, any cereal,kraft cheese,string cheese (let me know what brand),yogurt,Camel cig coupons, and any oatmeal, cereal bars, waffles,wipes, manwich,philidelphia cream cheese,toaster strudel, flavored creamer,any juice,kashi bars,any shampoo, ARM $ Hammer Deoderant, toilet paper, lactaid milk, frozen veggies, lysol/chlorox wipes,dreft off any product not specific, bounce dryer sheets,breakstone sourcream,always need any hand sanitizer!! but will take random coupon exchange as well.

Hawaiian Ham
1 can of pineapple chunks in juice
diced up ham
flour

Heat the ham and pineapple together. When it's warm, mix some flour with a little warm water to make a paste to thicken up the pineapple and ham mixture. Stir in the flour and mix well. When sauce is thickened, serve over rice. This is really yummy and easy to make.

I put leftover ham in with some navy beans and have navy beans with ham and usually put cornbread with it.

I usually chop it all up in bite size pieces or smaller and freeze it to use in soups and other things later.

Like Bean soup or Veggie soup. I also toss it in with Green beans for supper time. Toss in your eggs at Breakfast.

You can also make Beans and potatoes as a side:
Toss cut/peeled potatoes in crock pot with 2-3 cans of green beans w/the bean juices. Add some ham and let cook all day till potatoes are done. You might need to add water if there is not enough juices. Add salt and pepper to taste.

(I can't stand ham salad!)
